LENTIL & BUCKWHEAT SOUP
Ingredients:
Lentils 75 gram
Buckwhaet 500 gram (quinoa & millet can be used as suitable alternatives)
Veggie mix (1kg):
- -Sweet Potato
- -Carrots
- -Cabbage
- -Celery
- -Turnips
- -Leeks
- -Spinach
serves 6
Cooking Instructions:
- 1. Place soup mix in a pot on medium heat.
- 2. Add two cans chopped tomatoes (one can be substituted with a chilli flavour should you desire a more spicy option)
- 3. Add two stock cubes to 2,5L water and mix
- 4. Add to soup mix
- 5. Bring to boil and simmer for ± 60 minutes (until lentils and buckwheat are tender)
- 6. Season to taste
