LENTIL & BUCKWHEAT SOUP

Ingredients:

Lentils 75 gram
Buckwhaet 500 gram (quinoa & millet can be used as suitable alternatives)

Veggie mix (1kg):
  • -Sweet Potato
  • -Carrots
  • -Cabbage
  • -Celery
  • -Turnips
  • -Leeks
  • -Spinach

serves 6


Cooking Instructions:
  • 1. Place soup mix in a pot on medium heat.
  • 2. Add two cans chopped tomatoes (one can be substituted with a chilli flavour should you desire a more spicy option)
  • 3. Add two stock cubes to 2,5L water and mix
  • 4. Add to soup mix
  • 5. Bring to boil and simmer for ± 60 minutes (until lentils and buckwheat are tender)
  • 6. Season to taste
